The standard skeleton allows basic maneuverability of the limbs, waist, and knees. With the update skeleton the head can be popped on/off easily with snap joint, the shoulders can move and shrug, the waist can bow all around, and the knees are more flexible. So if you want just the basic skeleton that is fine, but if you want to be able to have more control over the pose then update skeleton is for you.
